The simple answer is YES! 

By far the most talked about eco-friendly backsplash material these days is glass.  Glass is a great choice because it provides you with so many different styles to choose from.  You can go for a mosaic, or a more elaborate ornate or modern design, featuring multiple different sizes or shapes; the newest thing is to have large glass sheets that float on the wall, allowing you to backlight them for a glowing effect.
